My journey into fermentation started in 2006 with a “how to make kimchi” workshop with Sandor Katz at Maverick Farms near Boone NC. This turned out to be the gateway to all things fermented, especially beverages. Around this time a friend brought me a SCOBY from a road trip to New England saying, “not sure what this is, do you want it? Yes, of course!” I replied and have been brewing kombucha since. I always called my brew, Booch, so living in Boone NC, Boone Booch was only natural. We started Boone Booch to fill a key need in the kombucha craft beverage community (sourcing and combining unique ingredients) and to develop a health tonic with roots in the creativity, resiliency, and beauty that reflect the Southern Appalachian Highlands.
